Vancouver Grill Fairmont Nanjing
Vancouver Grill is a fine dining steak restaurant in Fairmont’s flagship hotel in Nanjing, China. With a seating capacity of 70, the restaurant is blessed with a 16 foot high ceiling.
The main feature becomes 3 groups of 6 foot tall acrylic and glass shards. Inspired by hide hanging in a tannery, these imposing sculptural forms fill the restaurant space, yet allowing lighting above them to filter through and cast shimmering light and shadow on the dining area.
Cow-hide wing chairs complete the theme of the tannery. The 3 sculptural shards features, defining the three areas of the restaurant: cocktail bar, communal table and intimate dining, are subdivided by 2 large oversized “Mandarin screens” which span from floor to ceiling, giving the restaurant its Chinese context, while incorporating monochrome images of Vancouver.
